Sunday Morning Oat Cakes

I found this recipe some time back, and have modified it for my own use. The thing I like about it is that it only uses 1/4 cup of white flour. Other than that is it OATS OATS OATS! So good for you, and so full of fiber.

I start by mixing the dry ingredients ahead of time. After mixing, I store them in a glass jar. Then, when I am ready for a great morning breakfast, I only add 2 Tb butter, 1 egg and 1 cup of buttermilk. A few times, when I did not have buttermilk on hand, I have used sweet milk. It works too, but I think they are more flavorful with buttermilk.

The other thing I add is fruit. In the fall, I like to cut up an apple, and add it in. This time of year, I add about a cup of fresh blueberries or cut up peaches. You can use almost anything. Bananas would be good too. Or pears. Because the dry ingredients are mixed ahead of time, it is a good camping breakfast too.

I start by mixing the dry ingredients for storage.

In this photo you see I am making three at a time. i will store them in glass jars until a Sunday morning comes along!

Storage will be in the glass jars.

Now who in the world would do this without making cute labels for the jars?

Now... to wait for the perfect Sunday morning................ waiting...... nope, still Saturday... waiting

OK - now! The Morning Glories are telling me that this is the just right time!

One jar of the mix, 1 cup of buttermilk, 1 egg and 2 Tb melted butter

Mixing.... I added peaches this morning,

because the peach tree outside is LOADED!

But, blueberries, apples, bananas and almost any fruit will

make it in this recipe.

And onto a hot griddle.

Flip when they are all bubbly.

Ah - Sunday morning breakfast!
