Comfort Food
When I was young, my mom used to make this dish for my sisters and me occasionally. My mother was not an exceptional cook, but she was good at comfort, and good at making comfort food. This lunch is one I associate as comforting on a cold winter day. It is also a quick and tasty lunch, and a good way to add protein to your lunch time.

The first thing to do is to cook 2 cups of noodles in boiling water, and drain. Set aside.

Saute 1/3 cup chopped onion in 1 Tb of butter. Cook until onion is soft.

Beat 4 eggs with 2 Tb milk

Add the noodles to the onion, then the egg mixture. Season with salt and pepper.

Cook a few minutes, as you would scrambled eggs.
